Caramel Glazed Apple Bread

Last week I realized I had several apples in our fruit basket and there was no way my kids were going to be able to polish them off before they went bad. I decided instead of throwing them away, I wanted to make some sort of yummy treat for us to enjoy. My kids LOVE banana bread and so I changed it up and made apple bread. This was a HUGE hit with the kids and us. It would be perfect for a gathering, pot luck, morning treat, etc. I think I will definitely be making this again next time its my turn to bring treats to my Bible group! 

Ingredients:

1 1/2 cups apple (peeled and shredded)
1 cup packed brown sugar
1/2 cup buttermilk
1/2 cup vegetable oil
4 eggs, lightly beaten
3 cups all purpose flour
1/2 cup chopped pecans (optional)
2 tsp baking soda
2 tsp ground cinnamon
1 tsp salt
1 tsp nutmeg

Glaze:
2 tbsp butter
1/4 cup packed brown sugar
1 tbsp milk
1/2 cup powdered sugar

Directions:

Preheat oven to 350. Grease bottoms of two (8×4 inch) baking pans. In large bowl, mix together apples, brown sugar, buttermilk, oil, and eggs. Stir in remaining bread ingredients. Pour into pans. Bake in oven 45-55 minutes, or until toothpick comes out clean from middle of bread. Remove from oven and allow to cool 10 minutes before removing bread from pan. Once ten minutes is up, remove bread from pan and allow to cool completely on a cooling rack, about an hour.
In a small saucepan, melt butter. Add in brown sugar and stir frequently until melted. Mix in milk. remove from heat and allow to cool slightly. Add in powdered sugar. *If glaze is too thick, add in 1-2 tbsp milk until desired consistency is reached and you can pour over top of bread.
Slice and enjoy!!

    I just had some leftover apples that were going to go bad because no one was eating them and I blended them to make them into applesauce to make my applesauce bread! It was amazing and they wanted more…I told them that there were no more apples. Funny that using what you have in the house comes up with the recipe that they can’t stay out of 🙂 Sounds like a great recipe. Hope to try soon.

    I think you mean to say peeled and shredded. It’s terribly difficult to peel a shredded apple.

    LOL!! Thanks for catching that, I corrected it! I suspect it would definitely be hard to peel a shredded apple, haha!!
