How to Make Apple Cheesecake Bars

Step 1. Preheat your oven to 350 degrees F. Line a 9×13 baking pan with parchment paper or grease with cooking spray. In a medium bowl, mix graham cracker crumbs, brown sugar, cinnamon, and butter.

Step 2. Press this mixture into the bottom of your baking dish. Bake the crust for 12 minutes. Allow the crust to cool before continuing.

Step 3. In a large bowl, beat cream cheese, sugar, and vanilla until smooth. Add eggs. Spread over cooled crust.

Step 4. Toss chopped apples with sugar and cinnamon. Sprinkle evenly over cheesecake.

Step 5. Combine flour, brown sugar, cinnamon, and butter. Sprinkle streusel over apples.

Step 6. Bake until golden with a slight jiggle in the center. Cool completely, then chill at least 6 hours or overnight.

Apple Crumble Cheesecake Bars
Ingredients
Graham Cracker Crust
- 1 ½ cups graham cracker crumbs
- 3 tablespoon brown sugar
- 1 teaspoon ground cinnamon
- 6 tablespoon melted butter
Cheesecake Filling
- 24 oz cream cheese softened
- 1 cup sugar
- 2 teaspoon vanilla extract
- 3 eggs room temperature
Apple Filling
- 3 granny smith apples peeled & finely chopped
- 3 tablespoon sugar
- 1 teaspoon ground cinnamon
Cinnamon Streusel Topping
- ½ cup flour all purpose
- ½ cup brown sugar
- 1 teaspoon ground cinnamon
- 4 tablespoon melted butter
Instructions
- Preheat your oven to 350 degrees F. Line a 9×13 baking dish with parchment paper.
Prepare the crust
- In a medium bowl, stir together graham cracker crumbs, 3 tbsp. of brown sugar, 1 tsp. cinnamon, and the 6 tbsp. melted butter. Press this mixture into the bottom of your baking dish. Bake the crust for 12 minutes. Allow the crust to cool before continuing.
Make cheesecake layer
- In a large mixing bowl, beat the cream cheese, sugar, and vanilla extract, until smooth. Add in the eggs, and mix to combine. Pour this mixture over the crust and smooth out evenly.
Add apple layer
- Take the granny smith apples and peel and chop them very fine. In a medium bowl, toss the chopped apples in 3 tbsp. sugar and 1 tsp. cinnamon. Sprinkle these over top of the cheesecake mixture.
Make streusel topping
- In another bowl, stir together the flour, ½ cup brown sugar, 1 tsp. cinnamon, and 4 tbsp. melted butter. Sprinkle this mixture over top of the cheesecake.
Bake & chill
- Bake at 350 for about 50 minutes, the top will begin to turn golden brown, but the center will still have a slight cheesecake jiggle. Allow the cheesecake to cool completely, then move to the refrigerator for 6 hours, or over night.
