If I am being honest, I bought a bag of mini-Cadbury eggs with the intention of making this recipe weeks ago. However, I opened the bag to have just one and of course, one turned into two and before I knew it…. I had to add another bag to my grocery list for the following week. Those little chocolates are not only addictive, but so creamy and delicious! When you add them into a classic Blondie, it makes them even better and is the ultimate sweet treat!
These Cadbury Mini Egg Bars have a decadent brown sugar base and are loaded with chocolate chips and Cadbury eggs throughout. This mini egg dessert literally melts in your mouth and is a family favorite!
Cadbury Mini Eggs Blondies Ingredients

- Butter– softened, I use unsalted butter since salt will be added into the recipe, if using salted butter, reduce added salt by 1/4 tsp.
- Brown Sugar– light brown sugar is my go-to, this adds a warm and sweet addition to the bars and helps them stay chewy
- White Sugar– adds to the sweetness of the bars and helps add in a crisp texture so you end up with a crisp outer bar with a chewy center
- Egg– this binds all the ingredients together, let your egg get to room temperature so it combines into the batter easier
- Vanilla Extract– try to use pure versus imitation for the best flavor addition
- Flour– all-purpose flour is best in this recipe
- Cornstarch– this helps keep the bars soft and fluffy
- Baking Soda/ Salt– these ingredients give the bars their rise, ensure freshness by changing out your baking soda every 6 months
- Chocolate Chips– I use Nestle semi-sweet, however, milk chocolate chips are great too. Use whichever type you have on hand
- Easter Mini Chocolate Eggs– I use Cadbury brand, however, any brand works as long as they are hard shelled with chocolate on the inside
How to make this Cadbury Mini Eggs Blondies Recipe
Using only a few pantry staples and some Cadbury mini eggs, these blondie bars come together in no time and are ready to enjoy in under 30 minutes!
- Preheat oven to 350 degrees and line an 8×8 baking dish with aluminum foil or parchment paper. You can also spray your pan with nonstick cooking spray, but using parchment paper or aluminum foil allows for easier removal from pan once baked.
- In a large bowl, cream together the butter, brown sugar, and white sugar until creamy.
- Add in the egg and vanilla, mixing until just combined.
- Slowly add in the flour, cornstarch, baking soda, and salt stirring until just combined.
- Fold in the chocolate chips and mini eggs.
- Press cookie dough into prepared pan and add additional chocolate chips and mini eggs to the top, pressing gently until they sink slightly into the dough.
- Place baking pan into the oven for about 18-25 minutes, or until the edges are lightly golden brown. You don’t want to overbake these as they will get hard, so try to remove just before cooked through as they continue to bake for a minute or two once removed from oven but still in pan.
- Once cooled, cut into desired size squares and enjoy!
Tips for making Easter Chocolate Chip Blondies
- Let the bars fully cool before slicing! You don’t want the chocolate chips and Easter candy to melt into a mess. Once these are cooled, they are easy to cut and will remain pretty!
- If you prefer a smaller Cadbury egg throughout, feel free to chop in half or crush in a Ziploc bag prior to adding into the cookie dough.
- The cookie dough is quite thick, so don’t let that surprise you. Simply press the dough into the prepared pan using your hands or a rubber spatula.
- Feel free to change up the chocolate chips to any flavor including white chocolate chips, peanut butter, dark chocolate, etc.
How to store Cadbury Egg Blondies
- Once fully cooled, you can store these Easter Egg Blondies at room temperature in an airtight container or bag up to 4 days.
- To refrigerate, place Cadbury egg bars in an airtight container for up to 5 days.
- To freeze, place bars into a freezer safe container up to 3 months. Thaw before serving.
- Reheating: if you prefer a warm bar, simply place piece into microwave for about 20 seconds. Remove and enjoy!

I have found that once fully cooled, these bars are quite easy to cut and stay in their shape. However, if you don’t have a sharp knife or if the bars aren’t fully cooled, be sure to use a plastic knife to easily cut through without sticking OR after each cut, run your knife under hot water to clean it off and warm it up.
Can I use a 9 x 9 baking pan instead of an 8 x 8?
Absolutely! Even an 11 x 7 baking pan works, it just changes the thickness of the bars. Keep an eye on baking time as each oven cooks differently and with the bars being a bit thinner, they may cook faster.
