    Buffalo Chicken Flatbread Pizza

    This Buffalo Chicken Flatbread Pizza comes together in no time and is packed with flavor! Perfect for an appetizer, snack, or meal!

    Buffalo Chicken Flatbread Pizza

    Las week I found some pita bread on sale at my grocery store. My original intention was to use it with some turkey/cheese and enjoy it as a quick lunch option. However, once home, I found some chicken I had cooked and frozen for later and opted to use it up!

    Using some chicken, cheese, and Buffalo sauce, these came together in no time and were a big hit with my family! My hubby doesn’t really care for Buffalo sauce and even he went back for another piece!

    We chose to cook ours on our Traeger (smoker), however, you can grill these or even place them in the oven. Whichever works best for you!

    Best part of all, you can make as many of these as desired and the leftovers reheat perfectly! I have three little ones that have been known to be picky with certain meals I made and even they cleared their plates in no time!

    If you love quick dinners, you are going to love this easy weeknight dinner. Frozen pizza or ordering from your local pizzeria might sound easier but you will have no regrets making a fresh, delicious flatbread pizza. All you need are a handful of simple ingredients! Did I also mention this recipe is a HUGE HIT during football season? If you're hosting a gathering (or going to one) cutting this pizza up into personal pizzas make for the perfect game day appetizer!

     Ingredients Needed

    • Mini pita breads
    • Buffalo sauce *more or less depending on preference
    • Chicken
    • Mozzarella cheese, shredded
    • Feta cheese, crumbled
    • Drizzle of ranch dressing is optional

    Buffalo Chicken Flatbread Pizza Directions

    1. Preheat the oven/grill to 375 degrees.
    2. Place pita breads on a flat surface and spread Buffalo sauce evenly on top.
    3. Spread cooked chicken on top of Buffalo sauce.
    4. Sprinkle Mozzarella cheese on top of chicken.
    5. Place pita bread carefully onto the grates of the grill/smoker (or onto a cookie sheet if using the oven).
    6. Allow to cook for about 6-8 minutes, or until the cheese is melted.
    7. Remove from heat and sprinkle Feta cheese (or blue cheese) on top, followed by Ranch dressing (if desired).
    8. You can garnish with some chopped Cilantro, or toppings of choice, before serving!

    Buffalo Chicken Flatbread Pizza Variations

    For this buffalo chicken pizza recipe, I used Feta cheese crumbles on top as a finishing touch, but if you're a fan of Blue Cheese, that is great too! Blue cheese crumbles won't compromise the taste at all. If you want to add other toppings or change the base altogether, that works as well! The possibilities are endless! Here are a few more ideas you can play around with this time (or next time) you make this delicious recipe!

    • Green onions make for a great topping!
    • Red pepper flakes and/or black pepper will give you an even spicier spicy buffalo chicken flavor.
    • Blue cheese dressing or BBQ sauce can be used instead of ranch dressing drizzle
    • Parmesan cheese is always a classic pizza topping as well!
    • Hot sauce, such as a bottle of Franks, is always an option to add more spice
