Pumpkin Pancakes

My family LOVES pancakes. When my husband and I got married, we quickly realized our biggest difference was that I did not like breakfast foods, while he could not get enough of them! He LOVES making pancakes, muffins, waffles, omelets, etc. I am okay with just a bowl of cereal or skipping (I know, that’s not good). Over the years, he has slowly opened my eyes to different recipes and now I can say that I LIKE breakfast. Nope, I don’t LOVE it, and I don’t think I ever will, but I definitely like it. 
My husband whipped up these pumpkin pancakes one night before church, and they were a hit. The pumpkin flavor was quite tasty, and they were fluffy/moist, just how I love them!!! Most of the breakfast recipes I post on this blog are from my husband. I sure got lucky finding a guy who enjoys cooking as much as I do, 🙂


1 1/2 cups milk
4 tbsp vinegar
2 cups flour
4 tbsp brown sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tsp allspice
2 tsp ground cinnamon
1 1/2 tsp ginger
2 eggs
4 tbsp melted butter
1 1/2 cups pumpkin puree



In a bowl, mix together milk and vinegar. Set aside for at least 5 minutes. In a different bowl, mix together flour, brown sugar, baking powder, baking soda, salt, allspice, cinnamon, and ginger. Add in eggs, milk mixture, melted butter, and pumpkin. Pour batter onto a hot griddle to make pancakes. Flip when slightly golden brown. Once both sides are cooked, serve warm. Melted butter and some syrup are great toppings!
