Old Fashioned Meatloaf

My most favorite thing growing up was my mom’s meatloaf. Every birthday, I would request it for my birthday dinner, and both my brother and dad would cringe, because they did not like meatloaf. Isn’t that crazy? How can you not like meatloaf, hehe! When I got married to my hubby, he too, was not a fan of meat loaf, thus it was banned from being on the birthday dinner list. I finally decided, the cook gets to decide whats for dinner, and if the cook wants meatloaf, the cook gets meatloaf, right? Well, I made this a few nights ago and my hubby said “I could eat this again, its full of flavor”. YEA! I was so excited to make this and most definitely be making it again, haha!


1 lb ground beef
1 1/4 tsp salt
1/4 tsp ground pepper
1/2 cup chopped onion
1/2 cup chopped green pepper
1 egg, lightly beaten
8oz canned diced tomatoes, drained
1/2 cup quick oats
1/3 cup ketchup
2 tbsp brown sugar
1 tbsp mustard


In a bowl, combine all ingredients minus ketchup, brown sugar, and mustard. Use hands to thoroughly combine. Place meat mixture into loaf pan. In a small bowl, mix together ketchup, brown sugar, and mustard.  Spread mixture on top of meatloaf. Bake in a preheated oven (375) for one hour. Serve warm!!! YUM!

What size pan are you using? How many servings does it serve?

I use a 10″ loaf pan, but you can make mini loaves if desired. This serves about 6-8 depending on desired size pieces :)
