One of my favorite lunches to enjoy is an egg salad sandwich! Not only is the flavor incredible, but I prep it ahead of time and get to enjoy a few days worth of lunches during my busy week. Whether I serve it on a croissant, sandwich bread, in a wrap, or on a bed of lettuce, this recipe comes together in no time and is a tried and true favorite!

Ingredients Needed to make this Classic Egg Salad Recipe

- Eggs– this is the base of the recipe! Hard boiled eggs that have been chilled are best! My go-to method using the Instant Pot keeps the eggs perfectly cooked, easy to peel, and a breeze to prepare!
- Mayonnaise– this adds the rich creaminess throughout. You can use any store brand desired, or use plain Greek yogurt.
- Mustard– yellow mustard is my go-to because it adds a tanginess, however, you can use Dijon mustard if desired.
- Celery– sliced, this adds a great crunch throughout.
- Green Onion– freshly sliced, adds tons of flavor. You can also use white onion or red onion if preferred.
- Salt/ Black Pepper– season to taste as this makes all the flavors combine perfectly. I love using freshly ground black pepper and kosher salt if you have access to it.
- Paprika– this is my key ingredient. Most recipes don’t include it, however, I have found that it adds just the right touch.
- Seasoning– I love adding different seasonings to my salad, so this is optional, however, if you are a fan of the “Everything but the Bagel Seasoning”, I highly recommend adding some in. It really brings it to the next level.
How to make Egg Salad
- Hard-boil the eggs and allow them to cool entirely before peeling.
- Chop eggs using a slicer or knife.
- In a medium mixing bowl, combine the eggs, mayo, mustard, celery, green onion, salt/pepper, Paprika, and seasoning (if using).
- Spread mixture onto croissant, lettuce wrap, or enjoy as is!
Add In Options
If you want to jazz up your egg salad, here are some great options!
- Add 1 teaspoon fresh lemon juice to keep things fresh and lighten the flavor.
- Fresh Herbs such as fresh Parsley, Chives, and fresh Dill are great add in’s.
- Chopped Dill pickles add a salty addition that is delicious.
- Substitute half the mayonnaise with Greek yogurt or a smashed avocado.
- Add a splash of hot sauce to kick up the spice a bit.
Ways to serve this Egg Salad Recipe
Once the ingredients are combined and the egg salad is prepared, you can simply dig in, or:
- Serve over a bed of lettuce
- Scoop it up using crackers, baguette, or crostini.
- Place some on sandwich bread for a hard boiled egg sandwich. Add some sprouts, avocado slices, lettuce, or radishes to really make it tasty!
- Enjoy on a croissant, in a wrap, tortilla, or pita.

Often times, when I am in a hurry, I simply add some to a croissant and move on with my day enjoying just my sandwich. When I have more time, here are some alternative ideas:
Storage Tips
To keep this recipe of egg salad fresh and delicious, here are some ways to store:
- Store in an airtight container in the fridge for up to 5 days.
- Don’t leave out at room temperature longer than 2 hours as it can spoil.
- Once ready to serve, if you have been storing it, stir it back up to combine the ingredients again and taste. You may need to adjust with a bit more salt and pepper.
- Once the egg salad gets watery and discolored, it should be tossed. You should get about 5 days from it though if stored in the refrigerator the entire time.

Ingredients
- 8 eggs

I never thought about adding bacon bits to it. This sounds delicious, I’m going to try it this week for lunch ๐ I’ve been having issues finding lettuce that even looks good and if I do it has to be used that day or the next before it goes bad๐
