Do you love trying new soups? I LOVE a warm, hearty soup! In fact, soup is served in my house year-round and I live in Houston! My hubby isn’t always thrilled, but he goes along with it!
From serving cornbread, tortillas, or bread with soups, to adding all the tasty toppings desired…you can’t go wrong!
Last week was chilly here in Houston and no matter what I did, I could not get warm. I wore a sweater, turned the heat up, had the fire going, and still was cold. The crazy part is, it was still about 45 degrees outside, so it wasn’t even abnormally cold.
Since I wanted to make something for dinner that was warm and hearty, I opted to go the soup route!
Easy Chicken Taco Soup is loaded with bold flavors and is quick to make which makes it perfect for a busy night!
After searching through my pantry for needed ingredients, I put this together quickly and let it simmer for a bit before my kids got home from school.
Since I had lots of fresh produce in the refrigerator from going grocery shopping, we were all able to add our favorite toppings to this soup and make it our own. My kids chose to go the sour cream/cheese route, whereas my hubby and I added lots of fresh tomatoes, avocado, cilantro, and more!
Ingredients Needed for Easy Chicken Taco Soup:
Olive Oil
Onion
Red Pepper
Rotel
Chicken Broth
Cumin
Garlic Powder
Smoked Paprika
Chili Powder
Corn
Black Beans
Cream Cheese
Chicken
Salt/Pepper

How to prepare:
Sauté onion with olive oil in a pot over medium heat for about 3 minutes.
Add in the red pepper, Rotel, chicken broth, seasonings, corn, and beans.
Allow soup to come to a boil, before reducing heat to low and allowing to simmer.
Add in cream cheese and stir until fully melted and incorporated.
Stir in the chicken and desired amount of salt/pepper.
Serve in bowls with desired toppings.

Can I make this in a slow cooker? Absolutely! Add all the ingredients, excluding cream cheese, to your slow cooker and cook on low for about 5 hours. Remove chicken and shred. Add chicken back in, along with the cream cheese. Cook an additional 30 minutes and stir to fully incorporate the cheese.
How do I freeze this soup? Allow the soup to fully thaw. Pour into a Ziploc gallon bag or airtight container and freeze for up to 3 months.
Can I make this spicy? Sure! Add in some red pepper flakes, Cayenne pepper, or a few splashes of hot sauce to kick the heat up a bit.
What should I serve with this soup? Cornbread, tortillas, or bread is always a great option. You can also serve a side salad with this!
Do I have to cook this in a Dutch Oven? Nope! Any soup pot works great, I just love using my Dutch Oven for any recipe I can!

- 1 tablespoon olive oil
- 1 onion *diced

- 20 oz Rotel
- 3 cups chicken broth
- 2 teaspoon garlic powder
- 1/2 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 tablespoon chili powder
- 2 cups corn
- 14 oz black beans *drained/rinsed
- 8 oz cream cheese
- 1 lb chicken *cooked/shredded
- salt/pepper/toppings of choice
Instructions
- Add olive oil and onion to a pot. Allow to cook for about 3 minutes over medium heat, or until tender.
- Add in red pepper, Rotel, chicken broth, seasonings, corn, and beans.
- Allow to cook for about 5 minutes.
- Add in the cream cheese and stir until fully melted.
- Add in the chicken and desired amount of salt/pepper.
- Bring soup to a boil before reducing heat to low and simmering for 10 minutes.
- Serve in a bowl with desired toppings.
