    • Bacon– chopped
    • Butter– I use unsalted butter to control the sodium levels
    • Onion– diced
    • Carrots– diced
    • Celery– diced
    • Garlic Cloves– minced
    • Flour– all purpose
    • Chicken Broth– you can also use chicken stock if you have it on hand, try to use low sodium chicken broth if possible to control salt levels
    • Chicken Bouillon Cube
    • Thyme
    • Bay Leaf
    • Salt/ Ground Black Pepper– to taste
    • Russet Potatoes– peeled and diced into small cubes, Yukon Gold Potatoes work great in this recipe too
    • Chicken Breast– boneless skinless chicken breasts work best but chicken thighs are great too, cooked and cut into small cubes
    • Heavy Cream– this adds the creaminess to the soup, you can also use half and half if desired

    How to make Creamy Chicken and Potato Soup

    1. In a large pot or large Dutch oven, cook bacon until crispy.
    2. Remove to paper towel lined plate and keep about ¼ cup pan drippings in pot.
    3. Add butter and melt.
    4. Saute onions, carrots, celery, and garlic for about 5 minutes.
    5. Sprinkle flour over vegetables and whisk for about 2-3 minutes. Remove pot from heat and slowly whisk in the chicken broth until smooth.
    6. Return pot over medium heat and add in the bouillon cube, thyme, bay leaf, salt, pepper, and potatoes.
    7. Bring to a boil and reduce heat to simmer for about 20 minutes, or until potatoes are fork tender.
    8. Add in the cooked chicken and heavy whipping cream, stirring to combine.
    9. Simmer over medium heat for about 10 minutes.

    • Reheat on the stove-top on medium-low heat until warmed through or in the microwave until warmed through. You can also reheat from frozen in a slow cooker after thawing it just enough to release it from the container.

    What cuts of chicken can I use for this recipe?

    Any type works as you’ll want to cook and dice the chicken prior to making this recipe. I tend to use Rotisserie Chicken or cooked/diced chicken breasts, however, chicken thighs work great too!

    You can add lots of yummy vegetables such as corn, broccoli, spinach, or kale. You can also add red pepper flakes, seasonings of your choosing, hot sauce, Worcestershire sauce, and more! Play around with it and make this your own!

    Do I have to peel the potatoes?

    If using a waxy potato such as Yukon Gold, New Potatoes, or even Red Potatoes, there is no need to peel. If you are using Russet, I do recommend peeling.

    How do I keep my potatoes from getting mushy?

    Be sure not to overcook them. If anything, take a few minutes off and keep them a bit more firm as over time, the potatoes will continue getting more tender just by being in the broth, getting reheated, etc.

    Since this meal includes protein, starch, and vegetables, it is a full meal in itself. However, when serving it, I love to add a side salad and some homemade crusty bread or Flaky Buttermilk Biscuits!

      SO delicious! I substituted 1 teaspoon chicken Better than Boullion for the bouillon cube and added 1 Tablespoon Worcestershire sauce – it was perfect.

      i thought you cannot freeze heavy cream that are in soups

        You can, just sometimes they get a bit grainy when thawed and reheated. No issues doing so however! Just be sure to allow the soup to fully cool before storing!
