Don’t you just love a good Caprese Salad? Although this is a variation of the classic version, all the same great flavors are still there!
In fact, you can stretch this one a bit further since its chopped and not sliced tomatoes!

In the summertime, my family loves to BBQ and make as many meals on the grill as possible. Not only does it keep the heat out of the kitchen, but it allows us to make dinner outside while we are enjoying some fun pool time!
One of my favorite things to do is to prep this salad in the morning, stick it in the refrigerator to chill throughout the day, and come dinnertime, this dish makes the best side to our burgers, chicken, seafood, and more!

Ingredients for this Chopped Caprese Salad:
- Cherry tomatoes, chopped
- Asparagus, chopped
- Mozzarella cheese, chopped
- Basil, chopped
- Balsamic Vinegar
- Italian seasoning (more if desired)
- Salt/Pepper to taste
How to prepare:
Toss all ingredients in a large bowl.
Refrigerate until ready to serve! *I love to chill this at least 4 hours, but its ready to enjoy anytime!

- 10 oz cherry tomatoes *chopped
- 1/2 bundle asparagus *chopped
- 1 cup Basil *chopped
- 8 oz mozzarella cheese *chopped
- 3 tablespoon Balsamic vinegar
- 1 teaspoon Italian seasoning

That’s a great addition, I just didn’t have any on hand, otherwise I would’ve added some!

Is the asparagus raw or cooked and just vinegar, salt and pepper? Sounds good and want to make this weekend. Thank you

Also Italian seasoning added in there 🙂
As for cooked or raw, we have had it both ways, raw is much more crunchy of course, but if you are okay with that, its quite yummy. If you prefer a more tender veggie, cook it and allow to cool before putting into the salad!! Enjoy!!
