Hopefully you all had a wonderful Christmas. I know I am still full from all the goodies that were in the house. Yes, I used the past tense, as we have now successfully finished all the sweets, hehe!
I made this a few nights back for dinner as I wanted something quick and easy, since I was feeling rather lazy. This was delicious, definitely resembled pot pie, and was kid friendly. We all gobbled it up quickly, leaving us with happy bellies, : )
4 large, boneless, skinless chicken breasts, cut into cubes
10 medium red potatoes, quartered
1 (8 oz) bag baby carrots
1 cup chopped celery
2 cans cream of chicken soup
2 bouillon cubes
2 tsp garlic powder
1 tsp ground pepper
2 cups frozen mixed vegetables
Combine all ingredients minus the frozen vegetables. Cook on low 6-7 hours, or high 3-4. One hour before being cooked, mix in vegetables and continue cooking. Serve over cooked noodles or biscuits.
