Lately I have been in love with the tomato and balsamic vinaigrette combination. I eat it by itself, I eat it with mozzarella , I eat it with a cat, I eat it with a hat haha. No but seriously I am eating it a lot these days. This recipe uses the ingredients with chicken and it does not disappoint. Plus the chicken is so juicy and flavorful . Just add your favorite sides and you have yourself an awesome meal. I hope you guys like it as much as I do.
1 pound of thin cut chicken breasts
salt and black pepper to taste
2 Tbsp extra virgin olive oil
2 cups chopped fresh tomatoes
2 cloves of minced garlic
4 Tablespoons of cold butter
1/2 cup of chopped fresh basil
2 teaspoons of Balsamic Vinaigrette
Preheat oil on non stick medium pan . Place chicken in pan and cook on medium heat for 8 minutes, turning once. Throw in the rest of the ingredients. Mix well until butter is melted. Cover and let it cook on low for another additional 5 minutes or until chicken is fully cooked. Serve with rice or pasta.
