Chocolate Chip Zucchini Bread

Growing up, my mom made the family many different types of breads. Banana bread and Zucchini bread were always my favorites. Once I got married and moved out, I mastered the banana bread, but never attempted to make zucchini bread. I decided to attempt it and sure enough, it was just as delicious as I remembered. Its such a yummy breakfast or snack, plus my kids love it. My kids love eating it as their morning snack, so it makes things easy!! This version has chocolate chips in it, so it adds a yummy sweet to it!!


1 1/2 cups sugar
1 cup vegetable oil
3 eggs
1 tbsp vanilla extract
2 cups grated zucchini
2 cups flour
1 tsp baking soda
1 tsp salt
1 tsp ground cinnamon
1 cup chocolate chips (any kind desired)


In a mixing bowl, whisk together the sugar, oil, and eggs. Once combined, add in vanilla and zucchini. In a separate bowl, combine the flour, baking soda, salt, and cinnamon. Slowly add dry ingredients to the wet ingredients. Once everything is mixed together, fold in chocolate chips. Pour batter into lined muffin cups, greased loaf pan, or greased mini loaf pans. Bake in a preheated oven, at 350 for about an hour. *More or less on the time depending on what you are baking it in.
