Turkey Avocado Panini

February 25, 2013 by Kristin Leave a Comment

This panini was amazing! It was quite healthy and light tasting, and since the hubby and I are HUGE fans of trying out new panini recipes, we were quite pleased with how this turned out! If you don’t have a panini press, I highly recommend getting one, but you can always use a griddle, skillet, etc.

Ingredients:

1 loaf focaccia bread
1/2 ripe avocado
1/4 cup light mayonnaise
2 slices provolone cheese
1 cup whole fresh spinach leaves
1/4 lb thinly sliced mesquite turkey breast
2 roasted red peppers, sliced into strips

Directions:

Mash the avocado and mayonnaise together in a small bowl. Set aside. Preheat the panini press (griddle, skillet). To make the sandwiches, cut the focaccia bread to desired size and cut in half creating a sandwich. Layer the provolone cheese on bottom. Place half the spinach leaves, half the turkey, and roasted red peppers next. Spread avocado mixture on top and close sandwich. Place on panini press or griddle/skillet for about 5 minutes, or until cheese is melted.
Enjoy!!
