Tomato Basil Tortellini Soup recipe
When the weather is cold, I don’t know about you, but I love a warm, hearty soup.
If you were to ask my hubby if he agreed, he would quickly say NO. He’s not a huge soup fan, can you believe it?!?! We are definitely opposites in that area!
Luckily, over the years, we have met in the middle, and he now enjoys hearty soups. The kind with substance to them, less broth like.
Last week, since the weather was chilly, I decided to make a new soup recipe!
Surprisingly, this was a HUGE hit with my family! As in, my kids and hubby even dipped their bread into their bowls to all but scrape the bowl clean!
Within 30 minutes, we were enjoying this with some tasty crusty bread!
Another side option would be a side salad! I opted for bread because, well, carbs are life, ha-ha! You can check out my tasty bread recipes here!

Tomato Basil Tortellini Soup Ingredients
You don’t need much to create this incredibly flavor packed soup! Here is everything you’ll need:
Onion- diced
Carrots- diced
Olive Oil
Basil- fresh is best
Spinach- fresh is best, if using frozen, be sure to squeeze out excess liquid
Chicken Broth
Milk
Pasta Sauce- any flavor desired works great
Tomatoes- diced, I use canned to keep things simple
Salt/Pepper
Garlic Powder
Tortellini- cheese filled, frozen or refrigerated works
How to prepare
This recipe is super simple and can be changed up to fit anyone’s desires. Sauté the veggies in olive oil, add in the tomatoes, broth and seasonings and then simmer. Once the broth is where you want it, add in the tortellini and serve! For full details and increments, scroll down to the printable recipe card below.
Variations
Meat: Want to add some protein?? Shredded chicken, Italian sausage, ground beef, and meatballs are all great options to try
Spicy: Like some heat?? Add in some red pepper flakes, spicy sausage, or even a splash of hot sauce
Pasta: Don’t want to use tortellini? No problem! Any desired pasta works good in this. Perhaps rotini, penne, or elbows.
How to store
If you want to prepare this ahead of when it is needed, I recommend following all the steps, except for adding the tortellini. Pasta seems to always absorb the liquids, so get the consistency where you want it and once ready to enjoy, reheat over the stove and add in the tortellini. This can be made up to 4 days in advance if stored in refrigerator.
You can also freeze this, but the tortellini may fall apart a bit. Let the soup naturally thaw versus microwaving/heating over stove. This can be frozen up to 3 months.

Tomato Basil Tortellini Soup
Equipment
Ingredients
- 1 onion *diced
- 1 cup carrots *diced
- 1 tablespoon olive oil
- 1/4 cup Basil, fresh *chopped
- 1 cup Spinach, fresh
- 5 cups chicken broth
- 1 cup milk
- 24 oz pasta sauce *any flavor works
- 14.5 oz diced tomatoes
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon garlic powder
- 19 oz cheese tortellini *frozen or refrigerated
Instructions
- Add the onion, carrots, and olive oil to a dutch oven or soup pot.
- Saute over medium heat for about 4-5 minutes.
- Add in the Basil, spinach, chicken broth, milk, pasta sauce, diced tomatoes, salt, pepper, and garlic powder. Stir to combine.
- Allow mixture to simmer over medium heat for about 10 minutes.
- Add in the tortellini and simmer for an additional 15-20 minutes.
- Serve in bowls with additional fresh Basil is desired!
