Chocolate Peanut Butter Ice Cream

My husband and I love adding a scoop of ice cream to any dessert we make. Ice-cream always makes everything better, right? A few weeks ago, I was sent a cookbook called “101 Gourmet Ice Cream Recipes“. I was asked to review it and needless to say, that was one review I was quite excited to do!! My hubby and I decided to go out and purchase an ice cream machine since we had been wanting one already. We bought the Cuisinart 2 Quart Frozen Yogurt, Sorbet, and Ice Cream Maker. Our first version, was chocolate and it was AMAZING!!! We decided to put it to the ultimate test and for our second version, try the chocolate peanut butter ice-cream. I have had many versions of chocolate peanut butter ice cream, so I knew I would be picky and be able to tell if this was a yummy recipe! This version blew my socks off!!! Okay, my socks stayed on, but I was majorly impressed!!! I can honestly say that this is my number one choice for chocolate peanut butter ice cream!! If you are an ice cream fan like I am, you need to try this!! We ate one scoop with a piece of our No Frost Oatmeal Cake!! YUM!!!!

Ingredients:

4 egg yolks
1 cup milk
1 cup heavy cream
1/2 cup sugar
2 tsp vanilla
1/3 cup cocoa powder
1/2 cup chocolate chips
Peanut Butter (desired amount)

Directions:

Slowly bring the milk, cocoa powder, and chocolate chips to a boil over medium-high heat. Once boiling, remove from heat. In a medium bowl, mix together the egg yolks and sugar until it is thick. Pour the mixture into the hot milk slowly while continuously stirring. After it is mixed, heat on medium until the custard thickens, about 10 minutes. Be careful not to let it boil. Once there is a film on the back of your spoon, remove from heat and allow to cool.
When the custard base is cool, stir in the heavy cream and vanilla. Transfer the mixture to your ice cream maker and follow the directions from the manufacturer.
Once the ice cream is to desired thickness and ready to eat, you can fold in desired amount of peanut butter. To make the ice cream more firm, place ice cream in your freezer for about an hour!!
