    Chicken and Rice Casserole

    Chicken and Rice Casserole is tender, creamy, rich, and packed full of hearty flavors. Satisfy your comfort food cravings with this easy to follow chicken and rice recipe.

    My family loves trying new casseroles. Since typically they are also so easy to make, I love them too! Especially having three kids and lots of busy after school activities!

    Casseroles are extremely budget friendly and can be stretched to feed many!

    Ingredients like pasta, rice, beans, chicken, canned veggies and soups, and more can easily come together in recipes that you will make again and again. One great technique for making a delicious, cheap casserole is using the leftovers that are already in your fridge. Plus, it saves on costs using ingredients you may already have!

    This casserole calls for ingredients that are simple, affordable, and if you have extra chicken leftover from another meal, you can use it in this tasty dish!

    Last week, I was cleaning out my freezer when I came across a bag of pre-cooked chicken. To be honest, I had forgotten it was in there, but once reminded, I took it out and decided to use it in our dinner. I always keep a box of Rice a Roni in our pantry for those busy nights, so I knew I would have the ingredients for this favorite meal!

    Ingredients Needed for this Chicken and Rice Casserole:

    Rice a Roni (I used Chicken and Garlic flavor)

    Cream of mushroom soup

    Sour cream

    Chicken, cooked and shredded or diced

    French fried onions

    rice, chicken, and fried onions combined into a flavorful meal

    After about fifteen minutes, I had this assembled and ready to go! Since I had prepped it early, I covered the casserole with tin foil, placed it in the refrigerator, and simply placed in the oven later that day!

    The flavors in this were amazing, and the French Onion topping really brought this to a new level. My kids loved the added crunch from the topping, however, my favorite part was the rice mixture as it was quite flavorful and was pure comfort food!

    Next time I make this, I will add in a bag of veggies so it turns into a full meal. Optional of course, but having one pan include everything for dinner sounds great to me! Maybe add in some green beans, chopped broccoli, or even peas!

    Equipment

    • Mixing Bowls
    • 9×13 baking pan
    • Sauce Pan

    Ingredients
      

    • 6 oz Rice a Roni *I use Chicken and Garlic flavor
    • 10 oz cream of mushroom soup
    • 1 cup sour cream
    • 1 lb chicken *cooked and shredded
    • 6 oz French Fried Onions

    Instructions
     

    • Preheat oven to 350 and grease a 9 x 13 baking pan.
    • Cook rice according to boxed directions.
    • Once cooked, add in the mushroom soup and sour cream. Stir until combined.
    • Add the chicken to the rice mixture.
    • Spread mixture on bottom of greased pan evenly.
    • Bake in oven for 40 minutes.
    • Remove pan from oven and sprinkle onions evenly on top.
    • Place pan back into oven to cook an additional 5-10 minutes, or until onions are golden brown.
    • Remove from oven and serve!!

      This sounds so delicious. I agree that adding some veggies would be great for an all-in-one meal. I think mushrooms and peas would be tasty with a side salad.
