This past Christmas, my parents gave me a quesadilla maker as one of my presents. I LOVE making quesadillas for my family because they are so simple and have so many varieties. This version was so yummy and the kids ate it up happily too!!! If you dont have a quesadilla maker, no problem, you can use a skillet just as easily!
4 flour tortillas
1 cup mozzarella cheese
1 cup shredded BBQ chicken
2/3 cup diced avocado
Heat up a skillet or your quesadilla maker. Lay a tortilla shell on the skillet or maker and add in 1/2 cup cheese, 1/2 cup chicken, and some avocado. Place another tortilla on top and allow to cook until bottom tortilla is golden brown. Flip to the other side and allow to cook until tortilla is golden brown and cheese is melted. Adjust recipe according to preference and amount of people serving. This makes 2 quesadillas.
*To cook the chicken, I used my slow cooker and place 2 chicken breasts and a bottle of BBQ sauce on low all day. Shredded the chicken using two forks before making the quesadillas and added a few spoons of the sauce on top for extra flavor
