A few weeks ago I saw a picture of “sloppy joe cups” floating around on Pinterest. I was super intrigued and immediately pinned it to my board. This past weekend, as I was going through my board trying to get some inspiration for meal planning, I realized I needed to come up with a variation of the sloppy joe cups since my hubby doesn’t care for sloppy joes. I decided to try BBQ beef since the whole family loves BBQ. Wow, these were good. I take that back, these were AMAZING!! My oldest kiddo said “you should call that a meat muffin” haha. I would have named this recipe that, but for some reason, “meat muffin” didn’t sound too appealing to me!!
If you want to take this recipe a step further than I did, you could use cornbread mix instead of biscuits!!
1 lb ground beef or ground turkey
2 packages of biscuits ( 8 count each)
BBQ sauce (as much sauce as you want to coat meat)
1/2 onion, chopped
Cheddar cheese, shredded
Grease a muffin tin and press biscuits inside, creating a biscuit “cup”. In a medium skillet, brown meat with onion over medium-high heat. Drain fat. Add in BBQ sauce until coated as desired. Allow to simmer 5 minutes. Scoop mixture into each biscuit cup. Place muffin tin in preheated oven (350) for about 15-20 minutes, or until slightly golden brown edges. Sprinkle cheddar cheese on top once removed from oven.
