Oven Roasted Salmon w/ Parmesan Mayo Crust

My family and I are HUGE salmon lovers. My hubby pretty much likes all seafood, I however, stick to salmon. Even my five year old son can polish off a whole fillet and ask for more. When I came across this version of salmon, I was a little hesitant because to me, mayo on a salmon fillet sounded a little odd. However, this was quite delicious and the whole family gobbled it down quickly!!


16-20 oz salmon fillet
3 tbsp Mayonnaise
2 tbsp Parmesan cheese, freshly grated


Preheat oven to 425. Line a cookie sheet with tin foil and rinse salmon with cold water. Pat dry and place on foil, skin side down. Season lightly with salt and pepper. In a small bowl, mix the mayo and cheese together. Spread mixture on top of salmon fillet. Sprinkle some Paprika on top. Bake in oven for 12-14 minutes, depending on thickness of salmon. Serve!
