Brown Sugar Glazed Salmon

My husband and I buy salmon from Costco, so needless to say, we have TONS of it in the freezer! I’ve been looking for new recipes, glazes, etc to spice things up to it and this was quite delicious. Typically, we grill our salmon, but last night, I just wasn’t in the mood to fire up the grill. Instead, we baked it and it was yummy! My five year old ate two plates of it, so it must be good, right??


1 lb salmon fillet
1/4 tsp salt
1/4 tsp pepper
3 tbsp brown sugar
1 tbsp soy sauce
4 tsp Dijon mustard
1 tsp vinegar


Cut salmon width-wise into four pieces. Place on a foil lined cookie sheet. Sprinkle with salt/pepper and bake uncovered at 425 for about 10 minutes.
Meanwhile, in a small saucepan, combine the sugar, soy sauce, mustard, and vinegar. Bring to a boil. Brush over salmon. Broil in oven for 1-2 minutes, or until fish flakes easily with a fork.
