Chocolate Caramel Brownies

These brownies are out of this world good. I am a HUGE chocolate junkie, so in my book, dessert is anything chocolate related. If it doesn’t have chocolate, I consider it part of another meal, haha!! These were so moist, full of gooey flavor, quite easy to make, and definitely a hit with the hubby!! Try them, you’ll love them!!


For the brownies:
1 cup (2 sticks) butter
12 oz semi-sweet chocolate, coarsely chopped
1 1/2 cups sugar
4 large eggs
1 tbsp vanilla extract
1 1/2 cups all purpose flour
1/2 tsp salt
1 cup semi-sweet chocolate chips
For the Caramel Filling:
14 oz bag caramel candies (I used Kraft, found in the candy aisle of the grocery store)
1/4 cup heavy whipping cream


Preheat oven to 350. Line a 9×13 baking pan with tin foil and grease/spray foil. In a medium, microwave safe bowl, melt together butter and semi sweet chocolate in microwave. Heat in 30 second increments as to not burn chocolate. Stir frequently. Once melted, add in sugar, eggs, and vanilla. Mix thoroughly. Add in flour and salt. Pour half the brownie batter in foil lined pan and bake 20 minutes, or until toothpick comes out clean. Remove from oven and cool 20 minutes. Meanwhile, in bowl, melt together caramel and whipping cream in microwave. Once combined, quickly pour mixture on top of cooled brownies.
Next, scoop out remaining brownie batter and place on top of caramel layer. Batter will be thick but just continue spreading it until even. Sprinkle chocolate chips on top of batter and place in oven for 25-30 minutes, or until brownies are cooked. Remove from oven and cool completely. *Placing in fridge for an hour or so makes cutting the brownies easier.
Remove tin foil tray from pan and cut brownies into desired size. Store in airtight container!
