Living here in Houston, TX….our summers are HOT! By hot, I mean, sticky, uncomfortable, full of humidity, etc. Now….once you get used to it, its not AS bad….but it takes some time to acclimate. I’ve given up on trying to have good hair days, instead, I rock the Mufasa look with my thick, semi wavy hair, haha!

As summer weather slowly heads our way (this week we have been in the 90’s and its only May), there is nothing more refreshing than a summer cocktail. Especially one that can be prepared in no time, using only a few ingredients. Check out my other cocktail drinks here, https://thecookinchicks.com/tag/cocktail/

Over the last few months, my hubby and I have focused on building our liquor supply. My hubby even built a wooden stand to tier our collection on our buffet. Now, its fun playing around with various drink concoctions because we typically already have the ingredients on hand. Plus, when company comes over, we have drink options for everyone.

Last week, I was prepping dinner and it was taking a bit longer than anticipated. My hubby was in the kitchen keeping me company when he asked if I wanted a drink. Who am I to turn down that kind of offer, right?? Well, he disappeared into the dining room for a few minutes and returned with these!

Not only are they quite pretty in color, but they were very tropical tasting! They reminded me of something you would sip on while relaxing on the beach!

The pineapple in these cocktails added a nice addition to the rum and blue curacao. Next time, if we serve these with guests, I plan on garnishing them with pineapple slices!

Enjoy, but please drink responsibly! Let me know what you think if you try my Electric Shark Cocktail!

Sounds delish but I only have plain rum. Will that work?
