    Cinnamon and Honey Sweet Potatoes

    Cinnamon and Honey Sweet Potatoes are tossed in honey and cinnamon before baking. Such a simple, cozy side dish perfect for any night of the week!

    I’m back at it with yet another cast iron side dish to try! However, if you don’t own a cast iron pan, simply use any oven safe skillet on hand!

    Last week, sweet potatoes were on sale at the local grocery store. Being that I have three picky kids, sweet potatoes are hit or miss in my family, all depending on how they are prepared. In fry form, nope, my kids are a no go on those. However, in sweet potato casserole or roasted, YES! My kids beg for seconds!

    I think it has to do with the sweetness because what kid doesn’t like sweet, almost sugar like foods, right?

    Tender sweet potatoes with a cinnamon honey glaze. Easy to prepare and pairs perfectly with any meal!

    A few nights ago, we peeled the sweet potatoes, diced them up and tossed them into some honey and cinnamon. Super simple and quick, and once tender, these were amazing! Fork tender, packed with flavor, and complimented our chicken dinner perfectly!

    You can decrease or increase the cinnamon/honey ratio to your preference, so feel free to make it your own!

    We didn’t have much for leftovers, but the small amount we did have was reheated the next day with our lunch and once again, thoroughly enjoyed!

    Such a simple, yet tasty side dish to pair with any meal!

    Ingredients needed for these Cinnamon Honey Sweet Potatoes:

    • Sweet Potatoes– just a few sweet potatoes, peeled and diced is all you need
    • Butter– because this just makes everything better, am I right?! Well, and also helps get these perfectly tender
    • Honey- I use local raw honey, so much more flavorful and has allergen benefits
    • Ground Cinnamon
    • Salt/Black Pepper

    How to prepare:

    1. Preheat oven to 350 degrees.
    2. Place all ingredients into your cast iron (or oven safe) skillet.
    3. Toss to combine and ensure sweet potatoes are thoroughly coated in seasonings.
    4. Place skillet in preheated oven and allow to roast for about 20 minutes, or until tender.
    5. Remove skillet from oven and serve!

    • Cast Iron Skillet

    Ingredients
      

    • 4 sweet potatoes, peeled and diced
    • 2 tablespoon butter
    • ¼ cup honey
    • ½ teaspoon ground cinnamon
    • ½ teaspoon salt
    • ¼ teaspoon black pepper

    Instructions
     

    • Preheat oven to 350 degrees.
    • Combine all the ingredients together in a cast iron skillet.
    • Toss to coat thorougly and place skillet into preheated oven.
    • Cook for about 20 minutes, or until tender.
    • Remove from oven, stir, and serve!

      I would use a little olive oil on these but other than that this was an easy and delicious dish.
