White Chocolate Chip Banana Muffins

Yesterday morning, as I was cleaning out my freezer, I noticed a few bananas that had made their way to the back of my freezer. Since my son was in the mood to bake with me, I figured I could make something using the bananas. I pulled them out and asked my son what he wanted to make. Keep in mind, he is only three, so I wasn’t actually banking on realistic, he-he! However, he surprised me and claimed he wanted to make chocolate muffins! He is definitely a kid after my own heart! We made these chocolate banana muffins in little to no time, and since we had white chocolate chips on hand, we used those! If you aren’t a fan, or have semi-sweet, milk chocolate, dark chocolate, etc., those will work just as great!

This recipe makes about 16 muffins depending on how full you fill the cups, or you can make it into mini loaves, etc.

 

Ingredients:

  • 1 1/2 cups flour
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 egg
  • 1/2 cup milk
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1/2 cup coconut oil, melted (or canola oil works)
  • 3 ripe bananas, mashed
  • 1/2 cup white chocolate chips

 

Directions:

  1. Grease a muffin tray OR use liners (my absolute favorite are these silicone muffins cups, great price too!!!)
  2. In a bowl, combine the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, combine the egg, milk, brown sugar, white sugar, vanilla extract, and oil.
  4. Add the dry ingredients into the wet ingredients and stir until just combined.
  5. Add in the mashed banana and chocolate chips.
  6. Pour mixture into muffin cups (or loaf pan) about 2/3 full.
  7. Place tray in preheated oven, 350, and bake for about 20-23 minutes, or until toothpick comes out clean once inserted in center of muffin.
  8. Remove from oven and allow to cool a few minutes before serving!
