    Round up your pantry staples and whip up this easy Texas Caviar recipe in minutes! Also known as Cowboy Caviar, this simple dip comes together in no time!

    Easy Texas Caviar recipe

    Now that my family has moved to Texas, I couldn’t pass up the opportunity to make Texas Caviar at our family BBQ last weekend.

    To celebrate Fourth of July, my brother’s family, parents, and my family all got together! I volunteered to make my potato salad and this yummy caviar!

    This was definitely a huge hit and even all the kids (all 6 of them), ate this up and had seconds! Not only was this incredibly flavorful, but it wasn’t filling, and was perfect as an appetizer!

    I added a scoop to my cheeseburger, and it was delicious! Next BBQ or picnic you go to, definitely prepare this!!

    What is Texas Caviar made of?

    Texas caviar is a salad of black-eyed peas lightly pickled in a vinaigrette-style dressing, often eaten as a dip accompaniment to tortilla chips. A great topping for fish, chicken or as a flavor packed salsa.

    Why is it called Texas Caviar?

    Invented in the 1950s by Helen Corbitt, famed 1950s Neiman Marcus food director, it was first served as “pickled black-eyed peas” on New Year’s Eve at the Houston Country Club. Soon after, it was dubbed “Texas caviar.”

    Ingredients Needed:

    • 2 (15 oz) cans black eyed peas, drained
    • 1 (15 oz) can black beans, drained and rinsed
    • 2 cups corn
    • 1 red onion, chopped small
    • 1 green pepper, chopped small
    • 1 red pepper, chopped small
    • 1 jalapeno, cored, de-seeded, chopped fine
    • 6 garlic cloves, minced
    • 1/4 cup fresh cilantro, minced
    • 3 tbsp. olive oil
    • 2 tbsp. red wine vinegar
    • 2 teaspoon salt
    • Juice of 1 lime

    How to prepare:

    1. Combine all ingredients in one medium bowl.
    2. Mix well.
    3. Place bowl into refrigerator for a minimum of 2 hours, best overnight.
    4. Stir well prior to serving!
    5. Serve with chips, crackers, on burgers, tacos, etc.

    How to store Texas Caviar

    This easily can last one week in the refrigerator if stored in an airtight container. In fact, if I am being honest, I have gone a bit over one week and it was fine. Did you know you can also freeze this? You can freeze it for up to a couple months in an airtight container. When you are ready to eat it, just place it in the fridge for a couple days to thaw. Give it a good stir prior to eating/ serving.
