This meal is one that I found from a fellow mommy. I am a huge fan of my slow cooker, so anything that I can make in it, is worth a try to me.
I served this over egg noodles, but you can serve it over rice or mashed potatoes if you prefer. Add a veggie as a side dish and you have an incredibly simple and flavorful supper!
3-4 tablespoons extra virgin olive oil
1 pound chicken breast (I used frozen, thawed works too)
1 onion, sliced
5 cloves garlic, minced
1 (14.5) can fire roasted tomatoes
1/2 cup balsamic vinegar
Salt/Pepper (a few shakes)
1 tablespoon sugar
Add the first seven ingredients into your slow cooker, leaving only the sugar out (this will be added in towards the end). Cook on low for about 7-8 hours, high for about 4-5 hours. 30 minutes prior to being completed, shred the chicken with a fork and add in the sugar and mix in. Place lid back on slow cooker and continue cooking for remaining time.
Once the timer is up, you are ready to serve! As mentioned above, I served mine over egg noodles, there are many options you can serve this with so be creative!!!
