Roasted Red Pepper Alfredo

Since my family LOVES to eat pasta, I always try to come up with new versions of it. We made this a few weeks ago and it was definitely a hit. My three year old kept asking for more, and for him to actually eat everything on his plate, its a miracle, haha! I had this on the table in no time, and there was plenty leftover for my hubby to take for lunch the following day!!

Ingredients:

12 oz linguine
2 tbsp olive oil
4 cloves garlic, minced
1 onion, diced
1/2 cup milk
1/2 cup heavy cream
4 oz goat cheese, crumbled
1/2 cup Parmesan cheese, grated
1 (12 oz) jar roasted red peppers

Directions:

In a large pot, boil and cook pasta according to directions on package. While pasta is cooking, add the olive oil to a pan. Add in onion and garlic and cook about 3 minutes, or until tender. Stir in the milk, cream, goat cheese, and Parmesan cheese and stir until melted. Using a blender, puree the red peppers until smooth. Add to the cheese mixture. *You can use an immersion blender for the peppers if you have one.
Add sauce to the pasta and toss to coat thoroughly. Sprinkle additional cheese on top if desired and serve!!
