Ever since I started making my chicken tostadas, I love finding new versions and ways to change them up. About a week ago, I made the chicken tostadas and had tons of the chicken left over. I decided it would be the perfect excuse to try a new version. These quick and easy tostadas do not call for the chicken, it is more of a vegetarian version, but since I had the chicken, I went ahead and added it! It was definitely a hit with my family!!
Refried Beans (I use my homemade kind but canned works as well)
Guacamole (I make my own, but store bought it great too)
Chipotle Chicken (optional)
Shredded Mexican Blend Cheese
Onions/ Green Onion/ Salsa
Lay out the corn tortillas on a baking sheet. Drizzle lightly each side of the corn tortilla. Sprinkle salt lightly if desired. Place baking sheet with desired amount of tortillas in a preheated oven, 400, and bake about 4 minutes per side, or until slightly golden brown and crispy. Remove from oven and set aside.
Gather ingredients and to assemble, spread a layer of refried beans on top of crispy tostada shell. Cover with chicken if using. Next, add all remaining ingredients in order desired. Serve! *You can tweak this by adding any variety of ingredients desired!
