Hot Jalapeno Corn Dip

A few weeks ago, I made quesadillas for dinner. I wasnt sure what to serve with it, but since I had a few cans of corn in the pantry, I decided to make this. The kids surprisingly loved it and ate it up happily. I was not too sure what they would think since it has a spicy kick to it, and typically they do not want anything spicy!! This would be perfect for parties, gatherings, Football season, or as a side dish to a lunch/dinner!! 

Ingredients:

2 cans sweet corn, drained
2 jalapenos, minced and seeded
2 green onion, chopped
1 cup red pepper, chopped
1/2 cup sour cream
1/2 cup mayonnaise
1/2 cup monterey jack cheese, shredded
1/2 cup cheddar cheese, shredded
1 tsp garlic powder
1 tsp onion powder
1/2 tsp chili powder
Dash of hot sauce
Salt/Pepper (to desired taste)

Directions:

In a bowl, mix together the sour cream, mayonnaise, spices, and hot sauce. Mix in the corn, jalapenos, green onion, red pepper, monterey jack cheese, and 1/4 cup cheddar cheese. Place mixture in a greased, 2 quart baking pan. Sprinkle remaining 1/4 cup cheddar cheese on top. Bake in a preheated oven, 375, for about 20 minutes, or until golden brown and bubbly! Enjoy with chips or crackers!
