This past week, I opened my freezer and found several bananas. Anytime I buy bananas and they get too ripe….I toss them in the freezer to make banana bread. Well, I had over 6 bananas in there as of a few days ago and knew I needed to use some up.
Since Christmas is coming up, I was in the mood to make something with a hint of Christmas. I decided to combine gingerbread with banana bread, and hope for a great end result.
My son didn’t have preschool that day, so he helped me whip this up in no time and let me tell you, this bread is fabulous! Just a slight hint of ginger, with a moist banana bread makes this a must try. My other two kiddos came home from school a few hours later and had this for their snacks. It was definitely a hit with everyone!!
Ingredients:
- 2 1/2 cups flour
- 1/2 cup brown sugar
- 1/2 cup molasses
- 1/4 cup milk
- 3 overripe bananas
- 1 egg
- 3 tbsp. vegetable oil
- 3 1/2 tsp baking powder
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1/2 tsp salt
Directions:
- In a medium mixing bowl, combine all the ingredients until combined.
- Grease a loaf pan (large or a few mini) and pour batter about 2/3 full.
- Place pan in preheated oven, 350, for 65-70 minutes, or until toothpick comes out clean when inserted in center.
- Allow to cool for 5 minutes before removing from pan and slicing!
