Garlic Spinach

I have never really messed around with cooking spinach before. It was just one of those things that got overlooked and I never thought about. When I received a head of spinach in my veggie/fruit basket, I was determined to find a yummy way to use it. I came across this recipe, and once I tweaked it a bit, it was delicious. My oldest kiddo loved it, my other two ate it but not happily hahaha. It has a yummy garlic flavor, and is quite quick to put together!

Ingredients:

1 tbsp unsalted butter
5 garlic cloves, thinly sliced
2 (10 oz) bags fresh spinach, or 2 full spinach clumps/heads
1 tsp garlic salt (optional)
1/2 lemon, juiced OR 1 tbsp sesame oil (whatever you have on hand)

Directions:

Heat the butter in a skillet over medium high heat. Stir in the garlic and allow to simmer for about 1-2 minutes, until garlic is fragrant. Add in handfuls of spinach, allowing each handful to wither before adding the next. Cook for about 4-5 minutes. Stir in juice or oil as well as garlic salt (if using). Serve warm!
