Ever since my hubby and I bought a panini press, my hubby is CONSTANTLY begging for panini’s. I had this version in a restaurant one time and was hooked, this recipe is quite similar to the restaurants, and of all the panini’s I have ever had, I must admit, this BY FAR, was the best one!!! Yummy!! Just thinking about it makes me want to go make one again, hehe!
1 focaccia bread, quartered
1/2 cup prepared basil pesto
1 cup diced cooked chicken
1/2 cup diced green pepper
1/2 cup diced red onion
Sliced Provolone cheese
Preheat panini grill. Slice each quartered bread in half horizontally. Spread each half with pesto. Layer bottom halves with equal amounts of chicken, bell pepper, onion, and sliced cheese. Spread some more pesto if desired. Top with remaining bread halves, forming 4 sandwiches.
Grill panini’s for about 5 minutes, or until bread is golden brown and cheese is melted.
