When I was growing up my mom also was a stay at home mom. One of the things that brings me back to those memories are breakfast tacos! Some how no matter how hungry you were, they always hit the spot. Two of my favorite, and now my kids favorite are the huevos Con chorizo (eggs and chorizo) and Frijoles con chorizo ( beans with chorizo). Full of flavor and so simple. Hope your family enjoys them as much as we do.
Huevos con chorizo
1 section of your chorizo rope (chorizo is usually next to the dairy section and comes in different options, I always buy the rope kind, because it divides it into section, for a longer lasting product.
Flour tortillas ( since I live in Texas I prefer the HEB flour tortillas, if not I like the raw ones you cook, next to the chorizo)
Place the chorizo in a non stick skillet and cook for about 3 minutes, occasionally stirring. Add the eggs and stir occasionally till cooked. Heat your tortillas on a hot skillet or griddle. Spoon in eggs , roll up and enjoy.
Optional : top with salsa
Frijoles con chorizo
1 can (15.5 ounces) of Goya Pinto beans
1 section of your chorizo rope
Place the chorizo in a non stick skillet and cook for about 3 minutes, occasionally stirring. Add the can of beans. With a potato masher , mash the beans and chorizo together, till you have a refried bean consistency. Heat your tortillas on a hot skillet or griddle. Spoon in beans , roll up and enjoy.
