I was looking for black bean recipes because I recently stock piled my pantry with some Rosarita’s Black Beans that were on crazy sale. Ainsley ( the teenage girl that I have guardianship over) loves Black bean burgers so I decided to give this recipe a try. It was a big success . My boys ate them right up thinking they were just plain old fashioned cheeseburgers. I will definitely be making this again! I thought it was hilarious because the same day Kristin posted her black bean taco recipe! Great minds think alike.
2 cans (15 oz. each) black beans, rinsed and drained
1 pkg. (6 oz.) Kraft fresh take 3 cheese southwestern blend mixed together
1 stalk celery, finely chopped
2 Tablespoons of water
8 slider buns
8 lettuce leaves
1/2 avocado, thinly sliced
Mash beans with fork in a bowl. Add the cheese mixture, celery and water and mix well. Shape into burger looking patties. Coat with a little bit of flour to help them stay together.
Heat large skillet sprayed with cooking spray on medium-high heat. Add patties; cook 5 min. on each side or until heated through .
Place on buns. Top with lettuce, avocados, and tomatoes. Enjoy shortly after cooking.
