About a week ago, we bought a big bag of apples. My kids are huge fans, but when we put them all in our fruit basket, I realized I had WAY too many. We would have to all eat about 4 apples a day to get them gone, ha-ha I decided to whip up these apple muffins to put in our freezer for a quick morning breakfast. The kids love them as do the hubby and I. My hubby said they taste like apple pie filling, in muffin form ha-ha!!
2 cups all purpose flour
1/2 cup white sugar
3 tsp baking powder
1/2 tsp salt
3/4 cup apple juice
1/3 cup vegetable oil
1 tsp ground cinnamon
1 cup apples (peeled, cored, and diced)
Preheat oven to 400. Place 12 muffin liners in muffin pan or grease bottom. In a medium bowl, combine flour, sugar, baking powder, cinnamon, and salt. Combine thoroughly. In a small bowl, combine apple juice, oil, and egg. Blend well. Add dry ingredients all at once and stir until ingredients are all moistened. *Batter will be lumpy.
Stir in chopped apples. Fill muffin cups about 2/3 full and bake 18-22 minutes, or until toothpick comes out clean. Cool a few minutes before removing from pan.
