Mini Cinnamon Sugar Pumpkin Muffins

Nothing says Fall like pumpkin, right?? Well, since Christmas themed everything is headed our way, I wanted to share one last pumpkin recipe for the season! Next week, you’ll see lots of cookies, peppermints, fudge, and more….but until then, try these mini muffins, you’ll love them!!

Cinnamon sugar, fluffy bite sized muffin, all with a hint of pumpkin; how can you not love that?!? Paired with a cup of coffee, you have the perfect morning treat, or evening treat!!


Mini Cinnamon Sugar Pumpkin Muffins


  • 1 3/4 cup flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1/2 tsp nutmeg
  • 1/4 cup unsalted butter, melted
  • 1/2 cup brown sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 3/4 cup pumpkin puree (I use Libby’s)
  • 1/2 cup milk


  • 1/4 cup unsalted butter, melted
  • 1/2 cup sugar
  • 1 tbsp. cinnamon

Mini Cinnamon Sugar Pumpkin Muffins


  1. Preheat oven to 375 and spray a mini muffin pan with cooking spray. Set aside.
  2. In a medium bowl, combine the flour, baking powder, salt, cinnamon, pumpkin pie spice, and nutmeg.
  3. In a separate bowl, combine the melted butter and brown sugar, whisking until combined.
  4. Add in the egg and vanilla.
  5. Stir in the pumpkin and milk.
  6. Once combined, pour the wet mixture into the dry mixture and stir until just combined.
  7. Using a spoon, scoop batter into each muffin cup, filling about 2/3 full.
  8. Once complete, place pan in oven and bake for about 10-12 minutes.
  9. Remove from oven and place mini muffins on cooling rack.
  10. While muffins are cooling slightly, melt the butter in a small dish.
  11. In a separate small dish, combine the sugar and cinnamon.
  12. Dip each mini muffin into the melted butter, followed by the cinnamon/sugar mixture.
  13. Serve and enjoy!!
