    Zesty Italian Potatoes

    If you’re looking for an easy roasted potato recipe, then look no further! These zesty little things are an absolute favorite side dish in my house! Crispy on the outside and soft and tender on the inside, these take no effort at all. The most perfect addition to any meal! But be warned, these potatoes may just end up stealing the spotlight! Yes, they’re that good!

    With only a 10-minute prep, I can pretty much guarantee this is about to become one of your favorite potato recipe!

    Ingredients Needed:

    Yellow/Red Potatoes- For best results, use red or yellow potatoes. That’s the secret to getting that tasty texture in every bite.
    Olive Oil- to help make the spices stick to the potatoes and give them that golden brown color
    Zesty Italian dressing mix (dry)- this brings all the flavor to the party
    Salt/Pepper- season to taste. The Italian dressing mix has some salt/pepper in it, so add based on preferences

    How to prepare Zesty Italian Potatoes:

    1. Dice red potatoes leaving skin on. *or simply cut in half as I did in pictures
    2. Cut desired amount and spread out on baking sheet.
    3. Drizzle olive oil on top of potatoes and use fingers to sift through, until thoroughly coated. (Shortcut– use a Ziploc bag to combine the ingredients and shake until all is coated)
    4. Sprinkle packet of Italian dressing mix on top of potatoes evenly.
    5. Sprinkle desired amount of salt and pepper on top.
    6. Bake in oven at 400 degrees for about 45 minutes, or until tender. Serve!

    Do I need to boil these potatoes before roasting?

    Nope! Just chop up the raw potatoes and add necessary ingredients. They come out tender, but crispy with no boiling beforehand. Such a time saver, right?

    What temperature to Roast Potatoes?

    To get that crispy texture and soft center, you’ll need to roast the potatoes at 400 degrees for 45 minutes. About halfway through roasting, you’ll want to move them around with a spatula to avoid sticking. Once done, remove from the oven and serve immediately.

    Tips for the BEST Zesty Italian Potatoes

    • This recipe is so flexible that you can also substitute the Zesty Italian Mix with garlic powder, rosemary, oregano, or fresh garlic to get similar results.
    • Leave the skin on. All the nutrients live in those skins. The skins also crisp up nicely when you roast potatoes. Crispy oven roasted potatoes are the best!
    • Store in an airtight container in the refrigerator for up to 4 days.
    • Don’t forget to flip the potatoes halfway so they will get a more even cooking.
    • If they aren’t as crunchy as you want them when done cooking turn on the broil to high and cook an additional few minutes.

      I will make this again. It was a snap to put together and everyone loved them. Oven temp worked perfectly with some salmon (which went in about the halfway mark).

      These look and sound delicious, but I’m confused by conflicting instructions on how to cut the potatoes. Above the recipe it says to cube them, then in the recipe itself it says to dice them, and then in the picture they’re just cut in half. I’m sure they’re delicious no matter how you cut them, but I wouldn’t think the same cooking times/temperatures would be the same in each case. Please clarify? Thanks! You have great recipes!
