Apple Strudel Muffins

A few weeks ago, my hubby and I whipped these up for a tasty breakfast on the weekend. We had some apples that no one had been eating, and wanted to find a way to use them up. Not only did these muffins have so much flavor, but they were pretty easy to make!! We had a few leftover, so we stuck them in the freezer and pulled them out the next week for breakfasts before school. All in all, these were a hit!!! I can’t wait to make them again in the Fall with all the fresh apple we pick, :)



  • 2 cups flour
  • 1/2 ┬átsp baking soda
  • 1┬átsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 cup butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 1/2 tsp vanilla extract
  • 1 1/2 cups apple, peeled, cored, chopped fine
  • 1/3 cup brown sugar
  • 1 tbsp flour
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cinnamon
  • 1 tbsp butter



  1. Preheat oven to 375. Grease or line muffin tray with liners.
  2. In a bowl, combine the flour, baking powder, baking soda, salt, and cinnamon.
  3. In a separate bowl, beat together the butter, sugars, and eggs until smooth and creamy.
  4. Mix in vanilla extract to butter mixture.
  5. Stir in apples, and gradually add in the flour mixture.
  6. Spoon batter into each muffin cup until about 2/3 full. *batter will resemble cookie dough, that is okay
  7. In a small bowl, combine the 1/2 cup brown sugar, 1 tbsp flour, 1/2 tsp nutmeg, and 1/2 tsp ground cinnamon.
  8. Cut in butter until topping resembles crumbs. *You can also choose to melt butter and spread cinnamon mixture over top.
  9. Either sprinkle or spread the cinnamon mixture (depending on what you chose with the butter), over the top of each muffin.
  10. Place tray in oven and cook for about 20 minutes, or until cooked through. Remove from oven and serve!
