A while back, I came across a slow cooker recipe for Caesar sandwiches. I was intrigued by it since I love Caesar dressing, but I wasn’t too fond of a warm Caesar sandwich in summer. So, I tweaked it a bit and the end result was delicious! Hopefully you agree, : )
- 1 lb chicken breast
- 1/2 cup- 1 cup Caesar dressing
- 1/2 cup Parmesan cheese, shredded
- 1/3 cup Parsley
- Ground Pepper
- Pita bread or Hamburger Bun
- Romaine Lettuce
Since I was gone all day, I placed my chicken in a slow cooker with about 1 cup of chicken broth and let it cook all day. You could boil the chicken if you want it done quickly. Shred chicken once cooked. In a bowl, mix chicken, Caesar dressing, Parmesan cheese, Parsley, and some pepper. Mix until combined. Put chicken mixture in refrigerator until chilled. Scoop chicken onto pita bread and top with romaine lettuce.
*If you prefer this warm, cook the chicken in the slow cooker. Remove chicken once cooked and shred. Add ingredients into chicken and place mixture back in slow cooker for an additional 30-45 minutes to heat. Serve on pita bread/hamburger bun and add some lettuce on top.
