Honey Roasted Carrots

About a week ago, I went on a Costco trip. I decided to get tons of veggies and fruit there since we seem to go through them so fast. One of the veggies I got, was a HUGE bag of baby carrots. I love to add them to our smoothies, munch on for a snack, etc. A few nights ago, as I was making dinner, I wanted to add a veggie and decided to use some of the carrots. Everyone enjoyed these, even my two year old, who ended up picking them up off his plate and eating two servings!!! Yea!!


Baby Carrots, I used about 3 handfuls….
3 tbsp olive oil
1/4 cup honey


Preheat oven to 350. Place the carrots in a baking dish and drizzle olive oil on top. Toss until coated thoroughly. Pour on honey and season with desired amount of salt/pepper. Toss a few more times to coat evenly.
Place dish into oven and cook for about 40 minutes, or until tender. Serve!
