This easy Chicken Pot Pie with Stuffing combines chicken and vegetables in a creamy sauce topped with savory Stove Top stuffing for a family-friendly dinner ready in 35 minutes.

Instructions
Preheat oven: Preheat oven to 400°F. Prepare the Stove Top stuffing according to package directions and set aside.
Cook chicken: Melt 1 tablespoon butter in a medium skillet over medium heat. Add chicken and cook until no longer pink. Arrange chicken in an even layer in the bottom of a 9x13-inch baking dish.
Cook vegetables: Melt the remaining 2 tablespoons butter in the same skillet. Add onion and mixed vegetables and sauté over medium heat for about 5 minutes. Spoon evenly over the chicken.
Make sauce: In a medium saucepan, combine cream of chicken soup, milk, and flour. Simmer over medium heat, stirring until smooth. Once the mixture begins to boil and thicken, remove from heat.
Assemble: Pour the creamy sauce evenly over the chicken and vegetables. Spread the prepared stuffing evenly over the top without packing it down.
Bake: Bake uncovered for 25 minutes, until the filling is hot and bubbly and the stuffing topping is lightly golden. Remove from oven and serve.
Notes
Chicken: Leftover cooked chicken or rotisserie chicken can be used as a shortcut. Skip the chicken cooking step and add it directly to the baking dish.
Vegetables: Use your favorite frozen vegetable blend or a combination of peas, carrots, corn, and green beans.
Soup: Cream of mushroom can be substituted for cream of chicken soup.
Stuffing: Chicken-flavored Stove Top is my go-to, but another flavor or brand of stuffing mix works too.
Make ahead: Prepare the chicken mixture ahead and refrigerate. For the best texture, prepare and add the stuffing just before baking.
Storage: Store leftovers covered in the refrigerator for up to 3-4 days.
