This easy Slow Cooker Taco Ranch Chili combines tender shredded chicken, Great Northern beans, Rotel, taco seasoning, and ranch seasoning for a flavorful family dinner with just 5 minutes of prep.
Slow Cooker: Add the Great Northern beans, Rotel, taco seasoning, ranch seasoning, and chicken breasts to the slow cooker. Stir the ingredients around the chicken to combine, then cover and cook on HIGH for 4 hours or LOW for about 8 hours, until the chicken reaches 165°F and is tender. Shred the chicken using two forks, then stir it back into the chili. Spoon into bowls, add your favorite toppings, and serve.
Instant Pot: Add the Great Northern beans, Rotel, taco seasoning, ranch seasoning, and chicken breasts to the Instant Pot. Secure the lid and move the valve to the sealing position. Cook on Manual/High Pressure for 15 minutes, then carefully perform a quick release. Once the pressure has released, remove the lid and shred the chicken using two forks. Stir the chicken back into the chili, add your favorite toppings, and serve.
Notes
For the slow cooker, cook on HIGH for 4 hours or LOW for about 8 hours.
Do not drain the Great Northern beans or Rotel since their liquid helps create the chili consistency.
Taste before adding extra salt since both taco seasoning and ranch seasoning contain sodium.
Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.
