These Pumpkin Coffee Cake Donuts are soft and fluffy baked pumpkin donuts topped with a buttery cinnamon crumb and sweet vanilla glaze, ready in just 25 minutes!
Prepare the pan: Preheat oven to 350°F and lightly grease a doughnut pan with non-stick baking spray.
Make the pumpkin donut batter: In a large bowl, combine the spice cake mix, pumpkin puree, eggs, and 3 tablespoons melted butter until smooth and combined.
Make the crumb topping: In a small bowl, combine the brown sugar, all-purpose flour, cinnamon, and nutmeg. Drizzle in 2 tablespoons melted butter and stir until the mixture is combined and crumbly.
Fill the pan: Fill the wells of the doughnut pan about ⅔ full with the pumpkin batter. Sprinkle the cinnamon crumb mixture evenly over the tops.
Bake: Bake for about 10 minutes, or until the donuts are set. Remove from the oven and cool in the pan for about 5 minutes before carefully transferring to a wire rack to finish cooling.
Make the vanilla glaze: In a small bowl, whisk together the powdered sugar, 2 tablespoons milk, and vanilla extract until smooth. Add additional milk, a little at a time, if needed to reach your desired consistency.
Glaze and serve: Once the donuts are completely cooled, drizzle the vanilla glaze evenly over the tops. Allow the glaze to set for a few minutes, then serve and enjoy!
Notes
Use 100% pure pumpkin puree, not pumpkin pie filling.
Fill each well about ⅔ full to leave room for the donuts to rise.
Avoid overbaking, as cake donuts can become dry quickly.
