or substitute with rum, brandy, or whiskey
Instructions
Preheat oven to 350°F (175°C). Grease 4 mini loaf pans or 1 large loaf pan.
In a large bowl, whisk together flour, baking powder, salt, cinnamon, nutmeg, and allspice.
In another bowl, whisk eggs, eggnog, sugar, melted butter, vanilla, and rum extract.
Gently combine wet and dry ingredients - don’t over-mix. Pour into prepared pans.
Bake: Mini loaves 30 mins or Large loaf 50 mins. Toothpick should come out clean.
Cool in pans 2-3 mins before removing. Enjoy warm or let cool completely.
Notes
Variations & Tips
Stir in ½ cup chopped nuts or dried cranberries.
Add crushed candy canes for a peppermint twist.
Brush cooled loaves with a light rum glaze.
Spread with cream cheese frosting for a dessert-style treat.
Don’t over-mix the batter; a few small lumps are fine.
Fill pans only ¾ full to prevent overflow.
