can use salsa verde/enchilada sauce if desired

shredded Mexican cheese blend
Instructions
Preheat oven to 350°F and lightly grease a 9x13-inch baking dish with cooking spray.
Cut 9 flour tortillas in half, leaving 3 whole tortillas. Set aside.
In a large skillet over medium heat, cook the ground beef and onion until the beef is no longer pink. Drain the excess grease.
Stir in the taco seasoning and water. Continue cooking until the liquid is absorbed, then stir in the black beans and remove from heat.
Arrange 6 tortilla halves around the bottom of the baking dish with 1 whole tortilla in the center, covering the bottom completely.
Spread half of the meat mixture over the tortillas. Top with half of the Pico de Gallo, half of the salsa, and 1 cup shredded cheese.
Add another tortilla layer, followed by the remaining meat mixture, Pico de Gallo, salsa, and 1 cup shredded cheese.
Add the final layer of tortillas and sprinkle the remaining 1 cup shredded cheese on top.
Bake uncovered for about 20 minutes, or until the cheese is melted and lightly golden.
Remove from the oven and let rest for 5-10 minutes before slicing. Add your favorite taco toppings and serve.
Notes
Drain the ground beef and black beans well to prevent excess liquid in the casserole.
If the salsa or Pico de Gallo is watery, drain off excess liquid before assembling.
Ground turkey or ground chicken can be used in place of ground beef.
Corn tortillas can be substituted for flour tortillas if desired.
Let the casserole rest for 5-10 minutes before slicing so the layers have time to set.
Store leftovers covered in the refrigerator for up to 4 days or freeze for up to 3 months.
