Prepare oven and pan: Preheat oven to 350°F and grease 4 mini loaf pans or one 9×5-inch loaf pan.
Combine wet ingredients: In a medium bowl, combine the eggs, mashed bananas, sugar, oil, and Greek yogurt.
Add dry ingredients: Add the flour, cinnamon, baking powder, and salt. Stir until just combined, being careful not to overmix.
