Ingredients

avocado
pitted and sliced in half

eggs
1
cup
cheddar cheese
shredded
2
slices
bacon
cooked and crumbled
Seasoning of choice (salt and pepper, Chupacabra, Slap Ya Mama, etc.)
Instructions
Remove the pit from the avocado and scoop out a small amount of the flesh to make room for the egg. Place the avocado halves into a skillet.
Crack an egg into each avocado half and sprinkle with your desired seasoning.
Top each avocado half with the shredded cheese and crumbled bacon.
Place the skillet on the grill grates and cook for 15-20 minutes, or until the eggs are cooked through and the cheese has melted.
Remove from the heat and serve immediately.
Notes
Use large, ripe avocados so there's enough room for the egg filling.
Scoop out about 1 tablespoon of avocado flesh before adding the egg to help prevent overflow.
Use large eggs rather than extra-large eggs, which can spill over the sides.
Use high heat on a grill or smoker. If making these on the stovetop, use medium-high heat.
Customize with green onions, hot sauce, diced vegetables, or Everything Bagel Seasoning.
For a smoky flavor, these can be cooked on a pellet grill or smoker using your favorite pellets. We often use mesquite.
