These soft and fluffy Baked Cinnamon Sugar Donuts are made with a simple cake-style batter, baked in a donut pan, and coated in buttery cinnamon sugar.
Preheat oven to 375°F. Lightly spray a 6-cavity donut pan with nonstick cooking spray.
In a medium bowl, whisk together the all-purpose flour, cornstarch, sugar, baking powder, salt, cinnamon, and nutmeg until the dry ingredients are evenly combined.
In a separate small bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until the wet ingredients are fully combined.
Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix the donut batter.
Spoon or pipe the batter into the prepared donut pan, filling each cavity about three-quarters full.

While the donuts bake, combine the sugar and cinnamon for the coating in a shallow bowl. Pour the melted butter into a separate shallow bowl.
