TOPPING
- 3 tablespoon butter, melted
- 1/4 cup sugar
- 1 teaspoon cinnamon
Preheat oven to 375 degrees and line a muffin tray with liners or cooking spray.
In a medium mixing bowl, combine the sugar, vegetable oil, eggs, and mashed bananas.
Once combined, add in the flour, baking soda, salt, cinnamon, and nutmeg.
Scoop muffin batter into lined muffin tray evenly.
Bake in preheated oven for about 18-20 minutes.
Remove from oven and place muffins on cooling rack.
In a small bowl, melt the butter. Set aside.
In a separate small bowl, combine the cinnamon/sugar.
Dip each muffin top into the melted butter, followed by the cinnamon/sugar mixture to coat the top thoroughly.
Continue process until all muffins have been coated.
